Vanilla Crème Brulée ~ White Horses Restaurant

A Brulée is a baked custard with a caramelised sugar crust. Tim and I, at White Horses, like to make a deep dish Brulée rather than the shallow dish version often seen in other Restaurants where the emphasis is on the crust rather than the custard. Brulées are fun because you can make many, many variations on the basic recipe by simply adding fruit or alcohol or spices to the custard. We have a Citrus Brulée on our current menu where we add the zest of Oranges, Limes and Lemons to the cream as we heat it plus a drop of Cointreau for added luxury !
